At Top Roe, the downtown Austin izakaya offers a matcha pot de crème—a silky, custard-style dessert that’s lightly sweet and infused with the earthy depth of green tea. The dish is elevated with a luxe topping of caviar, whose briny bite adds a surprising and delicious contrast to the creamy richness.
Paul Qui, James Beard award-winning chef behind Top Roe says, "Traditionally, sushi is served with green tea, and I’ve always loved how matcha, nori and fish each bring distinct yet naturally harmonious flavors. With our Matcha Pot de Crème (the only dessert on Top Roe’s menu), we wanted to take that idea in an unexpected direction—pairing the rich, earthy sweetness of matcha with the briny elegance of caviar. It’s a surprising combination, but one that captures the full spectrum of land and sea in a single bite."

Gus Clark
For over 7 years, Central Texas-based musician Gus Clark has been fronting his own band, “The Least Of His Problems”, as an accomplished vocalist, songwriter, band leader, and multi-instrumentalist. After spending his youth riding freight trains and hitch-hiking across the country and back, making his living busking on the street, Gus returned to his family trade of woodworking, making custom solid-wood furniture with his father. Before long it was clear that he needed to pursue a full time career playing and singing for people across the country. Gus pays beautiful homage to a deep well of golden-era American music traditions, blending 1950s and 60s honky tonk and classic country, with influences from Tex-Mex, Western-Swing, pre-WWII blues, Zydeco and R&B while adding a unique and contemporary style all his own. In a voice that combines unique sincerity with pitch-perfect emotive richness, Clark delivers classic barn-burners, good-time dance tunes, bittersweet heartbreak ballads, and more, taking listeners on a journey through American music, baring his soul, distinct personalty, and inimitable presence. His remarkable tenor and powerful musical presence are guaranteed to both wrench hearts and propel listeners onto the dance floor, whether Clark performs solo or backed by his rock-solid honky tonk band.
